Detailed Description
Still Waters Distillery found their niche inside the Canadian Whisky landscape with their single-barrel releases. This single malt whisky is made with 100% Canadian two-row malted barley that’s been mashed, fermented and distilled by hand in small batches. It is then aged in ex-bourbon barrels for a minimum of 3 years.
Stalk and Barrel Canadian Single Malt Whisky Tasting Notes
Nose: Intense aromas of new oak, a dusting of powdered ginger and a smell reminiscent of soggy card-stock sprayed with a fruity perfume, like what you might find in a damp, women’s interest, magazine.
Palate: Medium-bodied with a heavy wallop of peppery spice. New oak flavours dominate and all I taste is wood, apple cores and ginger.
Finish: Ultra dry with a long, lingering, almost sour woodiness, lightly sweetened by starchy apple cores.
Distillery Information
Still Waters Distillery is a tale of two Barry’s — co-founders Barry Stein and Barry Bernstein who started Still Waters Distillery in 2009, which became Ontario’s first micro-distillery. To this day, the two Barry’s oversee every barrel of production. Their hard work paid off with a Distillery of the Year award in 2013. Their first product was the award-winning “Stalk & Barrel” Single malt Whisky. They followed up this success with three additional Whiskies — a Rye and two blends that could easily be mistaken for Bourbons if one were to simply read the specification sheet. All of their products are aged a minimum of three years. They have no artificial color and no chill filtration, since they are served at either 46% ABV or at full cask strength.
